Sunflowers make me think of the fiery heat of the summer sun.
These little snacks are not only a great way to embrace the element of fire, but are also a healthy pick-me up during a hectic day. As you mix and roll the balls, think of the sunflowers eagerly following the sun as it crosses the sky. You will need: • 1 cup old fashioned oats (not quick) • ½ cup ground flax seed • ½ cup nut butter • 1⁄3 cup honey, preferably local • 1 ½ teaspoons vanilla • ½ cup mini chocolate chips • ½ cup sunflower seeds This is so easy-dump it all into a bowl and mix well with a spoon. Refrigerate for a half hour so it's firmer and easier to handle, then roll into one-inch balls of yumminess. Store in the fridge. As you form the dough into balls, try to focus on the healing, nurturing warmth of the sun. |
